Soft entry, fresh acidity, smooth tannins, and pleasant structure. Complex evolution with notes of cherry in spirit, licorice, and a mineral finish. Long persistence. Long, with echoes of dark fruit and spices. Excellent aging potential. Florentine steak, stewed wild boar, pappardelle with hare ragu, aged cheeses.
