01Pecorino, an indigenous grape variety from the Pescara hills, finds a lively and sunny character in this expression, the result of organically grown and hand-picked grapes. Vinification, with pre-fermentation maceration and fermentation at 16-18°C in steel on indigenous yeasts, preserves the freshness of the fruit, while a short aging on fine lees in steel and French oak tonneaux lends a hint of complexity.
