The Tasting
A guided note in three moments, by our curators
-
Appearance & Nose
01This IGT Sangiovese, from the Impruneta and Greve in Chianti areas, benefits from a special terroir, with calcareous, clayey, and shale soils, poor and suited for obtaining high-quality red grapes.
-
Palate & Finish
02The choice of a production of approximately 1kg per plant, the result of low yields and targeted thinning, guarantees perfect phenolic and sugary ripeness, prerequisites for a concentrated wine. Fermentation, entrusted to indigenous yeasts present on the grape, and manual harvesting in small crates, preserve the integrity of the fruit, contributing to an authentic expression of the varietal.

At the Table
03It pairs splendidly with pappa al pomodoro, bistecca alla fiorentina, and wild boar ragù.
