Complex and harmonious, with a remarkable structure that evolves in the mouth. Long and savory finish, with a mineral closure that promises great evolution. Smoked salmon tartare, beef carpaccio with Parmigiano Reggiano shavings, raw scampi with lime, Fin de Clair oysters.
