The Tasting
A guided note in three moments, by our curators
-
Appearance & Nose
01Petit Verdot, in a sparkling version as a Protected Geographical Indication Terre Siciliane, presents itself with a distinctive character.
-
Palate & Finish
02The winemaking involves a twelve-day fermentation on skins at controlled temperature, followed by malolactic fermentation which further softens its structure. The harvest in the Sant’Oliva contrada, on soils at 150 meters altitude exposed to the south-west, benefits from a warm and dry climate with mild winters, contributing to the wine's depth.

At the Table
03This sparkling wine pairs magnificently with grilled swordfish dishes or a pork roast with aromatic herbs.
