Appearance & Nose
01Negroamaro, the emblematic grape of Salento, expresses itself here through DRÙMON N, revealing its deep nature on a medium-textured, calcareous soil, at 300 meters above sea level. The harvest, which took place in the first ten days of October with manual picking into crates, allowed for careful processing starting with alcoholic fermentation in steel tanks at a controlled temperature, below 23°C.

Palate & Finish
02Malolactic fermentation, induced but not completed, along with six months of aging in steel, suggests youthful freshness and immediate drinkability. It appears in the glass with a color typical of the grape, ready to welcome aromas reminiscent of red fruits and earthy notes, then evolving on the palate with a juicy texture.

At the Table
03It is a wine that finds its best expression paired with traditional Puglian dishes, such as orecchiette with turnip greens, bombette, and roasted capocollo.
