Trento DOC, recognised in 1993, was the first Italian appellation conceived exclusively for traditional-method sparkling wine. It is not a category inside a broader DOC: the appellation exists for nothing else. Trentodoc, written as one word, is the collective mark under which the producers' institute unified their communication from 2007, which is why you see the name written two ways.

The story begins with one person. Giulio Ferrari, trained at Montpellier and in Champagne, brought Chardonnay cuttings back to Trento at the start of the twentieth century, convinced that the Trentino mountains could give traditional-method wine what the plains cannot. The permitted varieties still reflect that decision: Chardonnay, Pinot Noir, Pinot Blanc and Meunier.

Altitude is the real unwritten rulebook. Vineyards climb from the floor of the Adige valley to beyond seven hundred metres, and the day-to-night temperature swing preserves the acidity a traditional-method wine needs: fruit picked with enough phenolic ripeness and its acids still intact. That is why Trentodoc tastes taut and vertical, unlike the rounder Franciacorta, which grows on moraine soils at far lower elevations.

Time on the lees is the scale to buy by: at least fifteen months for non-vintage, twenty-four for Millesimato, thirty-six for Riserva. In practice many houses go well beyond the minimum, and the long-aged reserves are where this appellation is at its best.
